    This collaboration with our friends from Twin Sails Brewing started one fateful night in the town of Dunham. We were lodged together in a house on a hill, for Brasserie Dunham’s Foudres Unis festival. After sharing a few beers, the plan for this collab was hatched! We departed from our usual base wort, opting to include Cara Aroma and Munich malts. After fermenting for 16 months in Spanish red wine barrels the resulting blend has medium acidity, bright red fruit notes, light wine tannin, and a dry finish.

    Lager O’Darkness is our homage to the classic lighter dark beer. We put our lager twist on it and walk the line between easy drinkability and rich maltiness.     This collab with our friends from Sea Change is the second of two beers we brewed together; both were produced using identical ingredients but different processes. This Mixed Fermentation blend was fermented in Italian Moscato Bianco and Chianti barrels for 14 months using a special blend of yeasts and bacteria. The result is bright white wine fruitiness and red wine depth with intense citrus and floral hop character. It has round texture with high acidity, and a juicy finish.

    The Mimic is a Quick Turn Mixed Fermentation beer, fermented in stainless steel tanks for 4 months. Our use of the traditional Turbid Mashing process lends to full texture and flavour, while having a very low alcohol content. It is fermented with a special blend of Saccharomyces, Brettanomyces, Lactobacillus, and Pediococcus. This unique blend of organisms gives bright citrus and tropical fruit flavours and aromas, balanced by a round texture and medium acidity.

    Ferry of the Damned is a Quick Turn mixed fermentation beer fermented in stainless steel tanks for 4 months. It was then re-fermented on Riesling Grape Pomace with the addition of a special blend of microorganisms for an additional 2 months. The time spent on the Riesling pomace adds subtle wine character with additional texture and complexity. The result is a unique beer with bright citrus and wine flavours, subtle nutty aromatics, and medium light acidity. - We hope you like it.

    Sojourn in Sicily is a Mixed Fermentation blend featuring unique characteristics imparted by Sicilian Marsala barrels. The beer fermented in the Marsala barrels for 20 months before being blended. This blend is the first led by our brewer Ian “Nar” Nawrot who has been with the brewery since the start. The result is a robust beer with subtle red berry and rose water aromatics, savoury walnut and maple flavours, which are amplified by a medium high acidity. We hope you like it!

    Mix-Fermented in oak barrels. The Fruitful Pursuits Series is made in late summer when ripe fruit is in season and at peak quality. For 2019 Plum we used hundreds of kilograms of freshly harvested Damson and President Okanagan plums which stayed on this mixed-ferment blend for 2 months. The result is bright ruby-purple colour, very prominent plum character, and a medium-high acidity.

    86 Lagér is a barrel-fermented beer made with Lager and Brettanomyces yeasts. It’s a blend of 12 month of red wine barrels and dry hopped with Saaz and Strisselspalt. While fermenting, rogue acidifying microorganisms infiltrated a couple of barrels leading to an unexpected dimension: Medium light acidity! This Blend has floral hop notes, balanced red wine fruitiness, bright citrus and stone fruit aromatics.

    MIXED BARREL FERMENTATION Mentis Oculi is the second release in the Dry Hop Series. This blend of one and a half year mixed-ferment barrels is a collision of two worlds. Old World Tettnang and New World Simcoe, two wildly different hops, blend delightfully to dry hop this beer. The result is honey floral, ripe papaya, and light menthol hop character balanced by a full, round texture and medium-light acidity. We hope you like it.

    This collaboration with our friends from Brasserie Dieu Du Ciel! is a turbid mashed lager, fermented in Spanish red wine barrels then conditioned with Brettanomyces for 8 months. This process results in floral, honey character, with over ripe fruit and light Brettanomyces notes. It picks up subtle wine fruitiness and tannin from thebarrels and finishes with a delicate tart acidity.

    Brewed at The Monolith Convergent Evolution is the true convergence of Spontaneous and Mixed Fermentation. Fermented in red wine barrels for 2,3 & 4 years this blend combines the unique characteristics of both methods. The blend of 75% Spontaneous and 25% Mixed Fermentation gives the depth and complexity of Spontaneous with the brightness and vibrance of Mixed Fermentation. Made using historical methods developed in Belgium over generations, this blend of 1, 2 & 3 year barrels is our quintessential Spontaneous Fermentation blend. The result of these techniques is a unique product shaped by our local environment and indigenous microflora. It showcases classic stone fruit, apple and citric flavours and aromas with some bright red wine fruitiness, and subtle tannin, highlighted by a balanced acidity.

    Was surprised with a guided tour for my birthday with family and friends. Had a great time! Greg, the owner, took the time to show us around, and explained in detail the unique process of their brewery. Afterward, we were treated to a variety of distinct flavours of beer and enjoyed talking with the friendly employees. Great local company, who take pride in supporting Canadian suppliers, their staff, and enjoying the crafting process. We all had a great time. Thanks!

    This place was awesome... Very friendly and knowledgeable staff that genuinely seem to love what they do. Clean and classy. The food was awesome... Very well thought out and complex using a lot of locally sourced materials. Not a big enough menu for a dinner but for appetizers they paired well with the beers and were delicious. The beer itself is largely sour because they use wine barrels... As someone who traditionally likes IPAs it was quite a shift for me BUT getting outside my box wasn't a bad thing. Highly recommend for a stop off on a date or a fun experience!

    We came for a date night and the experience was absolutely amazing. We tried samplers of every beer which ended up being about 9 different beers and they were all delicious other then a few (due to personal preference) The guys serving the beer were very knowledgeable on the tasting notes of every beer and were very willing to talk about the processes which made it a fun enjoyable experience. They made you feel like friends just having a beer together. We had a sandwich which was was really small so if you're hungry eat before you go. Overall we will come back for a tour and to try new beers when they're released.

    Love this place, food is killer and the beer is very unique Belgian style beers, staff will sit down with you and explain the way they make beer with a passion for what they do, food is from Biera and very well suited for the beer they serve.
